Chicken Pot Pie(s)

Okay, before I dive into this one, I need a favor. I have a bit of bloggie housekeeping to take care of, and it’s a bit embarrassing. Long story short, I recently installed a plug-in affecting the feed that I didn’t realize I needed when I initially launched the site. Now to the tasty business.

This may be a staple comfort food for some of you, but I don’t think I ever had chicken pot pie until Brad insisted I try some of the Marie Callender one he had one night in college.  I was… not particularly wowed.

This recipe changed all that. I my original intent  in seeking out this recipe was as a surprise look-I-made-you-one-of-your-favorite-meals-ever dinner after Brad’s first round of law school exams. The look on his face when I finally let him out of the study (wouldn’t be a very good surprise if he could see what I was making, would it?) was like a six-year old’s at Christmas.

The original recipe I found for this claimed to make one 9-inch pie. With the adjustments I made, I have ended up with TWO 9-inch pies both times I’ve made it, which yields delicious homemade lunch for the next few days.  Tasty lunch, too. Also, it’s very flexible to veggie preference. Prefer potato over corn? Broccoli over peas? Both or either would probably be delicious. I like the crunch offered by the celery and the carrots, so I definitely recommend leaving them in if you’re gonna play mix-and-match, but it’s your pie, do what you like. Within reason…

Garlic Basil Butter

Hi there.

I don’t want this to be awkward.

But this is my first post in, oh, almost two weeks.

I’d love to say that I’ve been off somewhere exotic, tropical, and completely cut off from the internet to offer an excuse. But the truth is that I’ve been right here in good old North Carolina, I’ve just been working immense amounts of overtime. Which is great! It just means that the few hours I do have to myself, all I really feel like doing is collapsing into bed for a couple chapters of my book before I fall asleep.

I am really looking forward to this three day weekend not to relax, but to get caught up on cooking, editing photos, planting the next phase of my two little gardens, and on general maintenance of my life outside the office.

Some gardening, though, cannot be stopped. The basil continues its seemingly unending life, and while I know that I could just cut down all the plants to nip this in the bud, I’m now sorta curious to see how long they can last. But that decision means that I must find things to do with basil besides making pesto or layering it onto sandwiches. And voila! I stumbled across this recipe and decided immediately to try it out.

Potato Cheddar Soup

Yesterday was dreary. And lazy. I got up at 11:30 and did approximately nothing until 4:30. Nothing. It. Was. Glorious. Lazy days like this come rarely. I can normally talk myself into doing something moderately productive, even on the weekends: errands, cooking projects, editing photos, planting seeds, writing posts. But yesterday, for five surprising hours, nothing.

I crave soup on days like yesterday. Something warm, something filling, something that simmer and bubbles on the stove while the gray sky presses down outside. I have some old standbys, yes, but my friend Sara brought this one to my attention a while back, and let me tell you: it’s perfect for a dreary, lazy day because it’s super easy and comfort food to the max.

Cranberry Orange Cheesecake

I haven’t really addressed the food-elephant in the room of this time of year.

Thanksgiving!

This year, the gathering around our Thanksgiving table was rather small, just little old Brad and me, in fact. But that didn’t stop us from preparing a full-scale Thanksgiving feast. There was cornbread stuffing (well, dressing), broccoli casserole, warm cream biscuits, mashed potatoes, a three-legged turkey with no wings, smooth brown gravy, mini pumpkin cream pies

and cranberry sauce.

For me, cranberry sauce as a kid was one of two things: a can-shaped block of cranberry plopped on a small serving dish, or my grandma’s favorite cranberry salad. I was never a particularly big fan of either. But as usual, Deb over at Smitten Kitchen piqued my curiosity to try a homemade, incredibly simple cranberry sauce, and I doubt I’ll ever go back. It’s tart and lovely and full of little orange peel surprises all the way through.

Cranberry and orange are two of my favorite holiday flavors, and when combined, they only improve one another. So instead of making a teeny tiny batch for our teeny tiny guest list, I opted for the full batch so that I could play with the leftovers.

But what to make?

Rhubarb Marlow

Though the last few months have been a meteorological roller coaster here in Colorado, the temperatures that now soar up near or above 90 every day indicate that summer has finally arrived in full. The air conditioner in our apartment can hardly keep up with the summer sun, blazing through our western-facing windows on its long descent toward the mountains. Fortunately, our freezer faces no such challenge and can house within it a treasure trove of icy treats perfect for combating the summer heat. And what better way to welcome the arrival of the season than with a dessert that features one of its most celebrated fruits?

Ahhh, rhubarb. Such pretty stalks. Such poisonous leaves. (Seriously, don’t eat the leaves.) And such a short growing season that it’s best to indulge heavily when it finally appears. I can hardly prevent myself from making into my favorite Rhubarb Crisp, but in an effort to broaden my horizons, I dug into a very, very vintage cookbook to find some new ideas. To my delight, I discovered marlow, a dessert that is now so out of the common psyche that when I poked around to learn more, I couldn’t even find it on Wikipedia.

From what I’ve pieced together, marlow is a marshmallow-based dessert that can either be frozen to mimic ice cream or chilled to mimic mousse. It can feature a variety of flavors as the marshmallow, sugar, and heavy cream act as a clean canvas onto which you can paint rhubarb, cherries, chocolate, butterscotch, or anything else you want to eat for dessert. After the fruit (in this case) is cooked down with sugar, the marshmallows and whipped cream are mixed in to create a frothy, fluffy mixture ready for freezing.

Basic, Perfect Lemonade + Lemonade Popsicles

The impact that holidays have on my mood is real. I don’t even have Memorial Day off, but a feeling I can only describe as three-day-weekend anticipation built on Friday afternoon anyway, as I watched the clock tick toward 5pm. The lack of social commitments and spectacular weather of these two days feel like a luxurious break on their own.

There aren’t many things that can break me out of my water-all-time-time beverage habit, but the arrival of summer weather is one of them. And lemonade is usually first in line for my liquid-y cravings. Amazingly, though, I’d never made it from scratch until earlier this spring during the citrus extravaganza following my trip to California.

I can’t believe I waited so long.

Just lemons and sugar

Woe to the time I’ve wasted buying lemonade from the grocery. Woe to the powdery mix that’s walking around emulating this precious elixir. Using only a few lemons, you can make the most perfect, delightful lemonade with hardly any effort at all. Please do so as soon as possible.

Skillet Corn with Zucchini & Onion

For most of my life, I’ve eaten corn one of two ways: from a can or on the cob. (And I’m talking about kernels of corn here, not the corn syrup, corn meal, corn starch, and other corn products that certainly make up most of the “corn” in the average American diet.) In the summer, there was no greater thrill than Dad bringing home a bag full of fresh Colorado sweet corn, and I still look forward to the arrival of corn on the cob every time the season rolls around.

But it’s really only in the last few years that I’ve started appreciating fresh corn as an ingredient, as something more than just a cob of kernels slathered with butter. Fresh corn has flavor and texture that give everything from pizza to fajitas a little something extra.

In this dish, corn is not just an ingredient, it’s the star of the show. With two of my other favorite veggies to support it.

Friends, I have a confession.

A lot of the recipes I post on this blog are ones that I cook quite often. Lots of dinners, side dishes, breakfasts, and even desserts that you’ve seen in the last three years make regular appearances in my kitchen or in the kitchen’s of friends and family when I’m visiting. It’s actually pretty convenient to have my very own personal recipe book at my fingertips in any kitchen, grocery store, or farmers market that has data or free wifi.

But I’ve been holding out on you. I haven’t shared with you one of the treats I cook most often, a recipe that I know so well I haven’t looked at the recipe card in years, a recipe that continues to be Brad’s most-requested dessert.

My mom has been baking these cookies since long before I was born, and truth be told, they’ve gained rather a lot of fame at the staff meetings, potlucks, and holiday gatherings in her little corner of Southwest Colorado. This is also one of my mom’s memorized recipes, complete with a snappy little mnemonic jingle that I learned growing up and use to this day to remember the order of ingredients.

So why wasn’t this recipe at the top of my list to share when I started this blog? I’ve shared numerous other treasured recipes from my childhood: Almond Toffee, Lasagne, Favorite Party Mix, to name a few.

Here’s the truth. Most of my life, my mom used butter-flavored Crisco for her magical chocolate chip cookies. And while I had tried using butter and liked the results, it just felt odd to make such a vast departure from her recipe and then post it as “hers”. Irrational? Probably. But it held me back. I was writing a blog about eating less-processed, locally sourced ingredients. Butter-flavored Crisco is none of those things.

But then, a few months ago, my mom informed me that she had switched to butter for her cookies. Liberation! Now I could honor this, my “Mom’s recipe”, without the mysterious yellow shortening. I’m so excited to finally share these with you. (more…)

Potluck Potato Salad

I’m such a sucker for seasons. Each fall, I revel in the last blasts of colorful leaves before they fall to the ground and the first brisk morning that requires a jacket and boots. When winter arrives, the first snowfall leaves me breathless at its beauty. Then, as the days lengthen and spring erupts out of every bulb and tree bud, I wonder how I ever functioned without it. I swear, as appealing as climates like San Diego sometimes feel, I really don’t know what I’d do without the anticipation and satisfaction provided by shifting seasons.

At the moment, I’m clamoring for summer. For late evening walks in short-sleeved tees and sunlight after 8pm and COOKOUTS and mini golf. This weekend, after several days of positively gorgeous weather that hinted at the season to come, I quite simply couldn’t take it anymore and I pretended it had arrived right in my own kitchen by whipping up a batch of barbecue pulled pork and a simple, delightful potato salad that tastes just like summer.

I freakin’ love potato salad, and this one checks all the boxes I look for in a ideal scoop. Smooth chunks of potato still in their skins, a tangy assortment of crunchy mix-ins, cool and crisp, and most importantly, LIGHTLY DRESSED. I’m not interested in swimming through an ocean of mustard-flavored mayonnaise to uncover the 2-3 pieces of potato that may be hidden within, thank you very much. Most importantly, this salad is composed of pretty basic ingredients that I almost always have on hand and comes together fairly quickly.

Crispy Roasted Brussels Sprouts

It’s funny how some foods are portrayed in pop culture. Spinach will make you strong, like Popeye. Thanksgiving turkey is always cut on the table. Cakes are always dripping with pink icing and a cherry on top, which is a look I’ve rarely (if ever) seen on an actual cake. Broccoli is frowned upon by kids who eat it only when forced to do so by their parents.

And Brussels sprouts? I grew up knowing, from some ubiquitous source I can’t identify, that Brussels sprouts were just the worst. A vegetable that no one enjoyed. This seeming fact was so ingrained that for years, I avoided them.

Oof. SO much time wasted.

Fortunately, like sweet potatoes, Brussels sprouts have been rescued from the soggy casseroles of old that may have contributed to their bad rap and have been resurrected as trendy, tasty sides and appetizers at millennial-bait restaurants around the country. And I couldn’t be happier! After a few tremendous restaurant experiences, I began to notice these green little balls of goodness everywhere and can rarely resist tossing a pound or two into my grocery bag.
