Baked Tomato Pasta

Last year, I planted tomatoes in my little community garden plot. They were… unsuccessful. Extremely. I think I harvested two,maybe three tomatoes before they were attacked by bugs or rotted rather than ripened on the vine. Needless to say, I was distressed, but also determined to do better this year.

So I planted more tomatoes. Six plants, actually. And on the big tomato front, guess what? I still did not succeed. Dozens of green globes filled me with anticipation alllll summer. And then? Kaput. Like seriously, five tomatoes. It appears that I am doing something terribly wrong with my large tomatoes.

But the little guys! For the last six weeks, I’ve been harvesting dozens and dozens of both Sungolds, tiny orange spheres, generally considered the most flavorful cherry tomatoes, and Juliets, slightly larger egg-shaped tomatoes that ripen to a classic tomato red. A couple weeks ago, the harvests became so immense that even my tomato-loving beau couldn’t keep up with them. So what does one do with a couple pints of tiny tomatoes before they meet their maker?

This recipe features the tomatoes about as close to their natural form as is possible to get in a pasta “sauce”. To start, the tomatoes are simply sliced, squashed into a baking dish, and sprinkled with bread crumbs, cheese, garlic, and olive oil.

Carrot Oatmeal Cookies with Cream Cheese Glaze

It’s June! And this first day of June is many things!

1. The first day of June, which is exciting enough on its own
2. The first day of National Fresh Fruits and Vegetables Month
3. The first day of National Accordion Awareness Month (who knew we even had that? Consider yourself aware.)
3. Mah birthday!

I’m spending the day doing what any sensible girl would do. Reading on the balcony, possibly getting a pedicure, re-organizing my spices in tiny matching jars (!!!!!!), taking a stab at cooking crème brûlée, seeing a movie with friends… it’s a lovely day off! Full of little birthday presents to myself.

My birthday present to you, however, are these cookies.

Last year around this time, we talked about carrot cake. I was never a particularly big fan in the past, but I now frequently find myself craving those tender bites of spice-filled, textured cake topped with a healthy dollop of tangy icing. Plus, the carrots in my garden are now bursting from the soil (okay not bursting, they actually require rather a lot of coaxing to come out of the ground), and my experiment with a curious variety put carrot cake on the top of my list to make.

Aren’t these neat? I wish I had taken pictures of them straight out of the earth, their brilliant fuschia dims slightly within minutes: they are easily the most intriguing vegetable I’d planted so far. And what fun would it be to use purple carrots for carrot cake?

Chèvre Stuffed Mushrooms

I used to be a mushroom hater. Didn’t want them on pizza, in stir fries, on cheeseburgers, or anywhere else.

But one night during my sophomore year in college, Brad made a batch of stuffed mushrooms. To be sure, it might not have been the best timing to be learning to eat mushrooms stuffed with rich filling: I think it was 1am before a 6am flight across the country for several week or something. But I was hooked!

Mushrooms are so mysterious. Yes, the plain little button mushrooms I used in this recipe are pretty basic, but truly, mushrooms flourish in uncountable shapes, sizes, flavors, and potency. They burst out of the ground sometimes for only a few days and often won’t do so until a perfect balance of moisture, nutrients, and and temperature occurs.

I’d love to learn the art of picking wild mushrooms. Some family friends of ours go every summer, high into the mountains, and return with buckets full of brilliantly-colored mushrooms for cooking, drying, and preserving. What a way to eat locally, to pick something wild and then eat it for dinner! It’s a hobby, though, that I would only want to do with an expert. The mushrooms we can eat are earthy, delightfully squashy, and a dimensional addition to many dishes. But the ones that we can’t eat can, well, kill you.

Perhaps another day I’ll be brave enough to pick wild mushrooms myself. This day, though, I picked my mushrooms straight from the produce section.

DIY Greek Yogurt

I spend a lot of time contemplating my groceries. And frankly, rather a lot of time getting them. The bulk of them come from the farmers market: stall by stall, I buy some eggs here, zucchini there, a pound of pecans or cheese when I’m feeling flush. But I am rarely able to get everything I need at this weekly market. Due to rather restrictive small dairy laws in North Carolina, it’s nearly impossible to get liquid dairy products (like milk or cream) from a small farm. Needless to say, my cart at the grocery store often suggests that I need a cow of my own. Milk, cream, yogurt, cream cheese, cottage cheese… I get a lot of funny looks from cashiers.

Well I can’t have a cow. I’m sure the neighbors below us wouldn’t appreciate it. But I CAN mark another dairy product off the list of things to buy. It turns out yogurt is really, really easy to make. No rennet, no citric acid, no stretching, no aging (well, 8 hours), no cheese wax: all you really need to start yogurt is milk. And, of course, a little bit of yogurt.

At the risk of sounding icky, it’s important to know what yogurt is to understand why this method works. Yogurt is essentially milk that has been fermented by bacteria, and in most yogurts, the bacteria remains active. Seen the phrases “pro-biotic” and “active” on your yogurt? That’s a nice way of saying it’s basically alive. But don’t be grossed out! These are happy yogurt bacteria. With smiling little bacteria faces.

Basil Pesto Cavatappi

Alright, so, I know it’s summer and heatwaves are just a part of the drill (stay cool, mid-westerners!) but… it’s really hot here these days. The kind of hot that makes the walk from my parking lot at 9:30am more like a slog through a sauna. The kind where my weather tracker icon blinks furiously at me, warning me to stay indoors. Or where a broken air conditioner constitutes a full-blown maintenance emergency.

Someone in my life is happy about it though. It seems to be the perfect kind of hot for my basil to go. absolutely. crazy.

I think I had a misconception about what growing basil was going to involve; I didn’t realize just how quickly, and voraciously, it can grow. I’ve given my seven plants (yes, I know now that I may have overestimated how many plants I would need) four significant haircuts this season, and just a few days after each one, the plants again look like they haven’t seen scissors in weeks.

Sweet & Savory Pumpkin Dips

What is fall without pumpkins?

Giant carving pumpkins, bumpy heirloom pumpkins, creepy white pumpkins, compact pie pumpkins, teeny tiny decorative pumpkins…

The pumpkin is somewhat unique in that it is one of the few foods that is truly celebrated only in the season in which it readily grows. At almost any time of year, you can be sure to find at a grocery store virtually any fruit or vegetable your heart desires. But pumpkins? They pretty much only show up in September, and by November, those large cardboard bins with Snoopy on the side have disappeared from view.

I love this about pumpkins. Because when fall hits, everyone goes PUMPKIN. CRAZY. Pumpkins pies, beers, cheesecakes, soups, breads, butters, jack-o-lanterns… all in honor of this giant, orange squash. I wonder if such a craze would hit for every fruit or vegetable if they were somewhat, shall I say, less available than they tend to be these days. Would strawberry shortcake taste even better in late spring if one couldn’t buy clamshells of red (though not necessarily ripe) berries all year long? Would every tomato burst with better flavor if we had to go without them during winter months? Perhaps. Perhaps not. I, for one, love the anticipation of new foods coming into season, and pumpkins are certainly cause for celebration.

So celebrate we shall! I kicked off my pumpkin season while visiting friends in DC at our second annual “Fall Extravaganza!” (exclamation point required) to enjoy good company, good food, and a beautiful autumn night. My good friend Sarah and I can hardly be in the same room together without finding ourselves cooking enough food to feed an army, and this weekend was no different.

Makeshift Zucchini Latkes

Yes, those are beach umbrellas.

Yes, that’s a coffee table on a tenth-floor oceanfront balcony.

Yes, that’s homemade breakfast.

We just got back from a fabulous weekend at the beach, a weekend filled with sand and sun and all other manner of beach-y fun. But I also couldn’t resist the opportunity to utilize the full kitchen in our room. Unsure of what this little kitchen might keep in its cupboards, I packed, um, one or two essentials and tossed them in the car with my swimsuit and flip flops.

And to cook? I didn’t really have any meals in mind, but I filled a cooler with a smattering of ingredients anyway and put them in the car along with my box-o-kitchen-gear.

It turned out that breakfast on our first morning there was a great time to cook (Brad sleeps in like a champ). Based on the ingredients I had, I found two tasty latke recipes, which sounded so good I decided to combine them. I love a good potato pancake, and adding zucchini (first of the season!) seemed like an excellent idea.  After I had set my heart on these little cakes of joy, I discovered one flaw in my plan: I had forgotten the box grater.

No grater! I know I unloaded it from the dishwasher, how did it not make it into the box!?!? After maniacally opening every drawer and cupboard in the kitchen in search of cooking utensils (and finding only a spatula, a can opener, and a corkscrew), I tried to regain control. This was no big deal. Surely I could figure out how to fry some dang vegetables into a patty without the comfort and ease of my trusty grater.

Luckily I had not forgotten a big sharp knife. After much, much, much chopping, breakfast was near! Without long shreds of potato and zucchini, I was a little nervous about the patties holding together. How could these little chunks of vegetable adhere to one another strongly enough to become a latke? But miracle of miracles! Eggs and flour came to the rescue (as usual), and with some careful, two-spatula flipping, these little pancakes came out golden-brown, crispy, and full of flavor.

I’ve enjoyed latkes before with a little sour cream, but I did not have any in my tiny arsenal of ingredients. I did have cream, though, and after a few minutes of vigorous whipping and a dash of salt, I had just the dollop I was looking for. Thank goodness I didn’t forget a whisk.

And then breakfast! Enjoyed in the warm May sunshine and a salty breeze.

And with one hell of a view.

Makeshift Zucchini Latkes & Savory Cream

For the Latkes
1 1/2 c zucchini, finely chopped or grated
2 c potatoes, finely chopped or grated
3/4 c onion, finely chopped or grated
2 cloves garlic, minced
1 large egg, lightly beaten
1/4 c flour
1 tsp salt
1/2 tsp black pepper
1 tsp lemon juice
canola oil for frying

Slice zucchini in half length-wise and scoop out seeds with a spoon before chopping or grating. Finely chop or grate zucchini, potatoes, and onion and combine in a strainer. Squeeze out as much liquid as you can through the strainer. Pour vegetables into a large bowl and add garlic, egg, flour, salt, black pepper, and lemon juice. Stir until thoroughly combined.

In a large frying pan, add canola oil until the bottom is coated and heat over medium until oil glistens. Once oil is hot, carefully scoop a heaping tablespoon of the vegetable mixture into the pan and flatten with the back of the spoon. Use spoon to tuck stray pieces of potato or zucchini up against the latke if needed. Add three or four spoonfuls to your pan, depending on the size, to cook multiple latkes at once. Allow latke to cook for 2-3 minutes. Use a flat spatula to carefully lift latke from the pan. Then, have another spatula on hand to flip the latke onto, then returning it to the pan to allow the other side to cook. I found I had fewer tragedies using this method rather than flipping the latke with one spatula. Once both sides are golden brown and crisp, remove latkes to a plate lined with paper towels.

Serve hot with a dollop of savory cream (see below) for dipping.

For the Savory Cream

1/4 c heavy cream
dash of salt

Pour cream into a bowl and whisk/beat until cream has thickened to the point where it holds a soft peak. I found that returning the cream to the fridge every few minutes (mostly when I had latkes to flip) helped to keep the cream cold enough to hold shape.

Once cream has thickened, add just a little bit of salt to taste.

Sweet Corn & Bacon Pancakes

Raise your hand if you like the following:

a) pancakes
b) cornbread
c) corn on the cob
d) bacon
e) breakfast

If you raised your hand for none of these things, I question your culinary sanity. If you raised your hand for all of these things, THIS, my friend, is a recipe for you.

Here’s how this happened. I had corn on the cob and bacon in my fridge. I recently saw a recipe for a breakfast hash featuring them, and wanted to make it immediately. Buuuuuuut I wondered: could I make it a little cake instead? Like a latke? Or wait! Even better… a pancake? Or what about a cornbread?

Then it became clear: a cornbread-y pancake (the latke idea was cast aside for another day) studded with corn kernels and bits of bacon? Couldn’t possibly be all bad.

Blackberry Chocolate Chunk Ice Cream

If you’ve never spent time in Southwest Ohio, you might be surprised to know that it is home to some pretty unique foods. Aside from standard midwestern fare, not only one but two chains of restaurants devoted to Cincinnati chili speckle the region, each of which has ardent followers who flock there for liquid-y chili served atop spaghetti and under a mountain of cheddar cheese.

As someone who grew up in the Southwest, chili means something very different to me. The local fare I was far more enthusiastic about was the delectable dessert served at Graeter’s Ice Cream. Sold both in ice cream parlours and also by the pint at area grocery stores, Graeter’s features seasonal flavors amongst a collection of favorites, and one of their most beloved varieties is Blackberry Chip.

I’ve been scheming to invest in an ice cream machine for the last couple of years, and I finally took the plunge earlier this summer and got one. Frivolous? Perhaps. Necessary? Certainly not. But utterly worth it? Ab.So.Lutely.

This ice cream features one of my favorite tastes of summer: blackberries! Sweet but tart, these berries not only lend their lovely flavor to the ice cream but also provide their spectacular hue. The whole berry doesn’t end up in the final ice cream, just the juice, but with fresh berries you’ll end up with plenty of blackberry flavor.

Honey Caramel Apples

ATTENTION STORES EVERYWHERE:

I love Christmas, I really do. But I’m not ready for it. Not for candy canes and glittery pine cones and red ribbons on the ends of the aisle. I’m not ready for the ghost and goblin decor to be heaped haphazardly on a clearance rack by the checkout while pine boughs and Santa hats flood in from the back room. It’s Halloween this week, thank you very much, it’s Thanksgiving in a month, and there are several beautiful weeks of autumn between now and then.

And for you big-budget stores, I’m really not ready for jingle bells and dancing elves to adorn your circulars & commercials.

So in defiance of the ever-earlier Christmas season, I offer these treats that scream “Halloween!” loudly enough to drown out the dancing elves, at least for the next few days.

I speak, of course, of caramel apples. It’s no wonder this treat is a classic: a tart, crisp apple enrobed in a sheen of chewy honey caramel is one of the greatest joys of fall. These apples are Pink Ladies, my favorite variety, and they hail from this year’s annual apple-picking trip, which has become a cornerstone of every fall for me (my little blog is named after it!)
